Level 2 Award in Food Safety in Catering

The law requires that all food handlers are trained and/or supervised commensurate with their work activities. The Level 2 Award in Food Safety in Catering of the Chartered Institute of Environmental Health is a first level qualification in food hygiene and is nationally recognised in all sectors of the food industry.
 
Rigorous enforcement of food hygiene legislation is important, but is not in itself sufficient to prevent food poisoning. Food poisoning is normally caused by negligence or inexperience and consequently most experts in food hygiene believe that a reduction in the high level of food poisoning cases will only be achieved by the education of food handlers.
 
The practical information and advice contained in the programme will enable workers who complete the course to ensure that their work activities are carried out in a hygienic and safe way.
 
The syllabus includes: -

  • Bacteriology
  • The cause of food poisoning
  • Prevention of food poisoning
  • Personal hygiene
  • Pest control
  • Cleaning

On completion of the course, candidates will be able to sit the Chartered Institute of Environmental Health Level 2 Award in Food Safety in Catering Examination.

Level 3 Award in Supervising Food Safety in Catering

This course is suitable for managers and supervisors and those wishing to develop their basic knowledge of food hygiene. Possession of the Level 2 Award in Food Safety in Catering or the former Foundation Certificate would be an advantage, although not essential.
 
Course contents: -

  • Introduction to microbiology
  • Food poisoning and other foodborne diseases
  • Prevention of contamination
  • Preservation of food
  • Hygiene principles
  • Pest control
  • Food legislation

On completion of the course, candidates will be able to sit the Chartered Institute of Environmental Health Level 3 Award in Supervising Food Safety in Catering Examination.

Level 4 Award in Managing Food Safety in Catering

This course is suitable for managers and supervisors who have a thorough knowledge of basic food hygiene and wish to develop their skills. Possession of the Level 3 Award in Supervising Food Safety in Catering Certificate would be an advantage, although not essential.
 
The Level 4 Award in Managing Food Safety in Catering Certificate Course develops participants’ existing knowledge of food hygiene.
 
The syllabus includes: -

  • Food poisoning and its prevention
  • Food contamination and its prevention
  • Food storage and temperature control
  • Design and construction of food premises
  • Design of equipment
  • Training and education for food handlers
  • Management Control techniques

On completion of the course, candidates will be able to sit the Chartered Institute of Environmental Health Level 4 Award in Managing Food Safety in Catering Examination.
